The recipe was developed by pastry Chef Makoto Arami, renowned for seamlessly melding French and Japanese nuances. In 2025, he was named Pastry Talent of the Year by La Liste, an award recognising the most promising pastry chefs across bakeries, tea rooms, and dessert restaurants.
Mochelie® takes its name from the Japanese word mochi, a sticky rice cake, and the French chérie, meaning "sweetie." The name reflects its charm and invites you to enjoy it with affection. The ending "lie" also suggests a subtle "li"aison with "e"co, highlighting that Mochelie® is crafted with environmental consciousness.
The bottom part is Brisée Cookie that create a pleasant salty taste that melts in your mouth. On top of that is an almond tart with mochi inside that is realized by a meticulously designed structure with craftsmanship
Adorned with delicate, nature-inspired floral designs on top, each piece is handcrafted one by one with Japanese craftsmanship, expressing even the finest details.
